Apricot Peach Chunks

INGREDIENTS LIST:

  • ¾ cup almonds 

  • 1 cup cashews 

  • ½ cup dried apricots 

  • ½ cup dried peaches, roughly chopped 

  • 1 tsp vanilla paste or essence 

  • ¼ cup coconut oil 

  • 1 Tbsp. rice malt syrup 

  • pinch of salt 

  • 1 cup of desiccated coconut

DIRECTIONS:

  1. Place almonds and cashews in food processor and blend until they start to form a fine crumb. Pour into a bowl and set aside. 

  2. Place apricots and peaches in food processor, pulse until roughly chopped. Add nut crumbs back in along with vanilla paste, coconut oil, rice malt syrup and salt. Process on low until all ingredients are combined well. 

  3. Pour desiccated coconut into a shallow bowl. Shape mixture as desired and then coat in coconut. If mixture is too sticky, place in fridge for about 30 minutes before shaping. 

  4. Store in airtight container and place in fridge. Chunks can also be frozen if they are being used as a lunchbox snack.
