Lamington Balls With Chia Jam

To be honest, nothing beats a spongy lamington with Jam. However, these really are a nutritious and delicious alternative.

INGREDIENTS:

RASPBERRY CHIA JAM:

  • 1 cup frozen raspberries

  • 1 tsp. maple syrup

  • 2 Tbsp. chia seeds

  • 1/3 cup water

LAMINGTON:

  • 1 cup raw cashew nuts

  • 1 1/4 cups desiccated coconut

  • 1/4 cup coconut oil

  • 1 tsp of vanilla essence

  • 1 tsp pink himalayan salt

  • 3 Tbsp. maple syrup

  • 2 Tbsp. coconut oil

  • 125g dark chocolate (good quality)

  • extra desiccated coconut for rolling

 

DIRECTION:

  1. Make chia Jam. Combine frozen raspberries, 1 teaspoon of maple syrup and water in a saucepan. Bring to simmer, stirring regularly for about 10 minutes, until liquid has reduced by half. Remove from heat and stir in chia seeds. Place in a glass container and put in fridge for approximately 1 hour.

  2. Make Lamingtons. Place cashews and desiccated coconut in a food processor, blitz until fine crumbs are formed.

  3. Add vanilla, maple syrup and coconut oil. Process until all mixture comes together.

  4. Roll into balls with a tsp of chia jam in the middle, then place in freezer to harden.

  5. Place chocolate and 2 tablespoons of coconut oil in a glass bowl and stir over a saucepan of simmering water, until melted.

  6. Dip balls in chocolate and then roll in coconut, place in fridge to harden for at least 1 hour before eating.
