Blueberry, Apple & Lemon Layered Yoghurt

This zingy no fuss breakfast is healthy to the core. A great healthy choice for those short on time.

 

SERVES: 2

PREP TIME: 15 MINS


INGREDIENTS:

  • 1 punnet of blueberries

  • 1 green apple, grated with skin on

  • 1 lemon, rind & juice of one half

  • 2 Tbsp. of honey

  • 2 cups of Greek yoghurt

  • 1 cup of macadamia-goji toasted muesli (recipe in breakfast section) or use your favourite store bought muesli

 
 

DIRECTIONS:

  1. In a bowl mix Greek yoghurt, apple, lemon rind, lemon juice and honey.

  2. In a bowl, jar or container, place a layer of muesli, a dollop of yoghurt and then some blueberries. Repeat this process once or twice, depending on the vessel you are using.

  3. Place in the fridge until ready to consume!
