Tropical Toasted Muesli

This Tropical Toasted Muesli will have you jumping out of bed with anticipation. Seriously, this breakfast option is delicious and very nutritious. Packed with flavour and texture, it is sure to be enjoyed by the whole family.

Many store bought mueslis are laced with preservatives, especially if the muesli contains dried fruit, as well as added sugar and other sneaky fillers. So, not only does this muesli taste better, but you can also be confident that the ingredients are nourishing and natural, plus you know exactly what is going into your body.

Everyone needs a good breakfast to start their day, and this muesli is great for summer. Top it with your favourite fruits, yoghurt and milk of your choice!

INGREDIENTS LIST:

  • 2 cups Flannery’s rolled oats 

  • 1 cup Flannery’s sunflower kernels 

  • 1 cup Flannery’s pepitas 

  • 1 cup Lotus oatmeal 

  • 3/4 cup Flannery’s macadamia pieces 

  • ½ cup of Flannery’s coconut oil 

  • 1 tsp. of Very Vanilla vanilla essence 

  • 1/3 cup Absolute Organic maple syrup 

  • 1 cup Flannery’s shredded coconut 

  • 1 cup BULK dried mango, finely chopped 

  • 1 cup BULK dried pineapple, finely chopped

DIRECTIONS:

  1. Pre-heat oven to 140oC, line two baking trays with baking paper. 

  2. In a large bowl mix together oats, sunflower kernels, pepitas, oatmeal, macadamia pieces and shredded coconut. In a small bowl mix oil, maple syrup and vanilla essence. 

  3. Pour wet ingredients into dry ingredients and use hands to mix all ingredients together. 

  4. Spread muesli onto oven trays in a thin layer. Bake in oven for 20-30 minutes, or until golden. Flip mixture once during the baking time. 

  5. Allow muesli to cool, then pour into a bowl and mix in dried mango and pineapple. Store in an airtight container.
