There is no better time for an ice-block than on a warm Sunshine Coast day. It is so easy to reach into the freezer and grab a store-bought ice-block to quench your thirst and cool you down. However, store bought ice-blocks are usually high in added sugar and quite often contain artificial colours and flavours.

As the temperature rises, so does the availability of locally produced tropical fruit at pocket friendly prices, especially here in Queensland. So, why not have a go at making your own. They are extremely easy and then you know exactly what’s in them!

Unlike purely juice based ice-blocks, these beauties are made using the entire fruit so are packed full of fibre. They are very nutritious, stocked with vitamins and minerals and are a great way to add some greens to your diet.

A perfect snack for by the pool, after sport or an easy dessert. Keep them in your freezer this summer and you will always have a cool and refreshing snack on hand!

SERVES: 8 ICE-BLOCKS (DEPENDS ON THE MOULD) 

PREP: 20 MINS

FREEZE TIME: OVERNIGHT 


INGREDIENTS LIST:

  • ½ avocado, diced 

  • 1 mango, diced 

  • 1 cup pineapple, diced 

  • large handful of spinach 

  • small handful of mint leaves

DIRECTIONS:

  1. Place all ingredients into a blender and whiz until well combined and smooth in texture. 

  2. Pour mixture into ice-block moulds and place in refrigerator overnight. Remove from moulds and serve immediately.
