Shez’s Home-Made Muesli

Yum! This muesli is divine and so easy to make. You will never eat store-bought muesli again. Making your own avoids all the added sugar and other nasty surprises that are often added to store-bought muesli. Plus, your family is just going to love it. As you can add your own ‘flavour’ to this recipe, it is near impossible to mess it up! Mix and match nuts, seeds and dried fruit to suit you and your family or what is lying around in the cupboard.

 

MAKES: APPROX 8 CUPS

PREP: 15 MINS

COOL TIME: 25-30 MINS


INGREDIENTS LIST:

  • 2 cups OWN organic rolled oats 

  • 1 cup OWN sunflower seeds 

  • 1 cup OWN pepitas 

  • 1 cup Lotus oatmeal 

  • 1 cup nuts, roughly chopped (I chose almonds & macadamias) 

  • 1 Tbsp. Simply Organic cinnamon 

  • pinch of salt 

  • ½ cup Chef’s Choice coconut oil (melted) 

  • ½ cup Chef’s Choice maple syrup 

  • 1 tsp. Very Vanilla vanilla extract 

  • 1 cup mixed dried fruit, roughly chopped (I chose sultanas and cranberries)

DIRECTIONS:

  1. Pre-heat oven to 150oC and line an oven tray with baking paper. 

  2. In a large bowl combine oats, seeds, oatmeal, nuts, cinnamon and salt. In a small bowl whisk together coconut oil, maple syrup and vanilla extract. 

  3. Pour wet ingredients into dry ingredients and combine really well. 

  4. Pour mixture onto tray and spread evenly. Bake in oven for 25-30 minutes. To ensure even baking, remove muesli from oven and shuffle around with a spatula 2-3 times throughout the cooking process. Remove from oven when muesli has just turned a light golden brown. 

  5. Allow muesli to cool completely, then pour dried fruit evenly over mixture and gently mix with a wooden spoon. Store muesli in an airtight container.
