Gluten-Free Apple Pie Parcels

 
 

The smell of apple pie cooking in the oven has to be one of the most nostalgic scents. There is always that one family member that is renowned for their apple pie and usually the recipe is a secret, inscribed only in the mind of the creator. Well, I wanted to share with you a reasonably guilt free ‘Apple Pie’ parcel recipe, that is easily portioned and simple to make.  

The filling of regular apple pies is quite often laden with refined sugar and thickeners. This filling is simple and wholesome, free of refined sugars, sweetened only with maple syrup and thickened with chia seeds. Don’t worry though, these parcels still contain the delicious, warm flavours of a traditional apple pie!  

This recipe is made gluten-free using the Gluten Free Bakery Sweet Pastry. However, feel free to make your own or use an alternative. Serve up with your favourite ice-cream, cream or yoghurt.

PREP: 20 MINS + 30-60 MINS chill time

COOK TIME: 15-20 MINS


INGREDIENTS LIST:

  • 2- 2 ½ cups organic granny smith apples, diced (approximately 2 large apples) 

  • 1 Tbsp. True-organic unsalted butter 

  • ¼ cup Absolute Organic maple syrup 

  • 1 tsp. Simply Organic cinnamon 

  • 1 tsp. Chef’s Choice vanilla extract 

  • 1 tsp. organic lemon juice 

  • pinch of salt 

  • 1 Tbsp. OWN chia seeds 

  • 1 sheet Gluten Free Bakery sweet pastry, thawed 

  • 1 organic egg 

  • 1 Tbsp. milk or water

 
  • Gluten-Free 

  • Vegetarian


DIRECTIONS:

  1. Melt butter in a saucepan over medium heat. Once melted, add apple and cook for a few minutes, stirring frequently. 

  2. Add maple syrup, cinnamon, vanilla, lemon juice and salt. Mix to coat apple and cook for approximately 5 minutes until apples have softened and juice is released.  

  3. Remove from heat and gently stir in chia seeds. Allow to cool slightly then transfer to a bowl and place in refrigerator to chill for at least 30 minutes. 

  4. Once chilled, preheat oven to 200C.  

  5. Place thawed pastry on bench and slice into quarters with a sharp knife to form four squares. In a small bowl whisk together egg and milk or water and set aside. 

  6. Place 2-3 tablespoons of apple mixture in the centre of one half of each square, leaving a 1cm border. Brush border with egg mixture, then fold over empty half of pastry and seal edges using a fork.  

  7. Place on a baking tray lined with baking paper. Then, brush entire parcel with egg mixture. Finally, cut 2-3 slits in the top of the parcel. 

  8. Place in the oven for 15-20 minutes or until golden brown. Serve with cream, ice-cream or yoghurt.
