Does anyone else get sucked in by the multi-buys at the local fruit shop? Well, I do, every time! Most recently I over bought strawberries and voilà, I was inspired to bake something. Strawberries are currently in season and we are so lucky on the Sunshine Coast to be surrounded by local growers who supply us with an abundance of fresh and tasty strawberries. Motivated by schools heading back next week, I decided to make a tasty school lunch box snack! I hope you enjoy making and eating these delicious Strawberry and Banana Muffins as much as I did. This is a delicious and indulgent spin on basic overnight oats. The flavours of Banoffee Pie, have been used to create a scrumptious and nutritious breakfast or snack option with a bit of a kick. Step one can be prepared a couple of days in advance, just leave mixture in the fridge until you are ready to consume. Then, just top with yoghurt and the trimmings before heading to work, school or uni!
